Vegging Out Episode 2: At Vegan Island Restaurant, IL Corso

3.    My vegan journey brought me to Vegan Island Restaurant Cebu located at IL Corso Food Park.  It’s a small conspicuously situated at the center entrance of the food park and it’s owned and managed by Tudor Bonghanoy, an advocate for meatless dishes for healthy lifestyle.

Here are my finds of purely vegan meals here which I tremendously enjoyed:


a)    Vegan Pesto Pasta. Perfectly balanced and bursting with flavor, this dish is a feast for your taste buds in a guilt-free meal that's both delicious and sustainable.

b)    Vegan Mushroom Sisig. A plant-based twist on a Filipino classic made with fresh and juicy mushrooms, onions, garlic, and a medley of spices.

c)   Filipino dish - fishless sinigang. Bursting with tangy tamarind flavor, fresh veggies, and plant-based protein. The vegan fish used is made of soybeans. It is processed differently from the tofu because it’s texture is the same as the “tangigue” fish and also it is wrap with seaweeds.



Vegan Fried Mushrooms. Made of mushrooms, and it's the vegan version of "ginabot."



Vegan Chicken with Gravy. Made of unripe jackfruit. Kids favorite because they thought it is fried chicken and you really can’t tell that it’s jackfruit.
